Have any of you found a difference between using veggie wads, wonder wads, or plain felt wads?
or any difference in the thickness of them?

The fiber wads are an automotive gasket like material that i have in .030 or .060 thickness and they are stiff and make a better seal in my opinion. The felt wads that i have are very soft and mine happen to be lubricated. I don't believe they make nearly as good a seal although they do seem to help the load build pressure quicker than no wad thus obturating the bullet better. I prefer the gasket wads for the better seal. As far as accuracy goes, i think it depends on the particular rifle, bullet, and powder combination and some experimenting with the specific load would be in order.

I shot a little yesterday with the .060 veggie, no issues so far. Once I get this rifle settled in it's new stock and wearing some new glass, I'll try them all and see.

In my 40 I found them to be interchangeable. I have used the lube impregnated woolen wads and the .060" veggie wads and could see no difference between them with the 200gr XTPs.
