2 lbs. venison, 1 lb. hot or sage sausage, 1 large onion, 8 T. chili powder, 1 t. cumin, 4 minced garlic cloves, 2 t cayenne pepper, 8 T. flour, 32 oz. tomatoe sauce, 4 cups water, 2-8 oz. can Ro-Tel diced tomatoes. Brown venison and sausage together, drain grease and add water and tomatoe sauce. Add all dry ingredients except flour. Stir together and add ro-tel tomatoes, onion and garlic. Bring to a simmer and add flour slowly stirring constantly to prevent lumps, cover and simmer for 30 or more minutes. The longer you simmer, the spicier the chili. Top with cheese and crackers and enjoy. Brian

Brian, great sounding recipe and real close to the one I use. On occasion I substitute Spicy V8 for the Rotel tomatoes when I want a little soupier chili. Jack

Hey Jack you sound alot like me. I use V-8 quite often in soup, chili, etc. I figure that way the family is getting more nutrients than they would with just plain tomato juice and it gives it a nice blanced flavor.
Have you ever tried Hot Shot pepper blend on anything? I bought some about a month ago on "accident". I made a pot of chili and couldn't find the normal spice I normally use. So I got to looking for some suitable substitutes. I picked up a bottle of hot shot (made by McCormicks) and found that it is a blend of red and black pepper. I thought it sounded good so I bought it. Made that pot of chili and I swear it was the best pot of chili I ever made.
Since then I've bought 3 more bottles of it so I know I'll have it on hand when needed (I've just opened the second bottle since I used up first one) and if you put it in the flour you dredge your chicken in before frying, it will give it an awesome flavor. I can't wait to try it on some fresh venison backstrap this fall.
