I actually have 3 different ways I do the crusts...
Crust 1; consists of a box of Jiffy cornbread mix, mix it like it says but make it runnier(add a bit more water) and add about a cup of cheese... I just put this over my meat mixture and cook, (I usually make this in the Dutch oven camping, when we are at a rendezvous ) you might not need all the topping unless you like it thick ;D
Crust 2: uses up old stale tortilla chips or new ones ... just crush up the chips, place a layer of chips, layer of meat, layer of cheese, repeat after layering you have a couple of more options... you can take a big can of tomato sauce OR red enchilada sauce and pour around the edges of the casserole using a knife gently spread the food from the edges and let the sauce drain down the side, put some over the top sprinkle with cheese and olives.
Crust 3: Good ole corn tortilla's torn up and used in the layers like above.
All would be baked at 350 degrees for about an hour, until cheese is hot and bubbly and its hot clear thru.
Now the meat mixture: heres where you can get REAL creative.
I start out with 1 to 1 1/2 lbs ground beef, elk, or venison. I usually use beef but the others would work great to.
I brown it with 1 onion chopped up
and since I do this on the run alot I use a pkg. of taco seasoning. I season to taste, but start out with one pkg. I usually add the water that is calls for on the pkg.
If you have other taco type seasonings you like, use them instead.
Ok now that is your base... from there I usually add
1 can of corn drained
1 can of chili OR kidney beans work as well
1 can of olives chopped roughly or sliced depends on time, keep some to put on the top.
green chilies would be good to, if you like them..
I like to use alot of cheese as well, but that is a personal preferance..so layer it and use the way you like... the meat mixture does need to be fairly moist so it will soak some into crusts 2 and 3:>
