I make alot of deer roasts in the crock pot. A 5-6 qt. size is best and gives you more room to vary a little on amount of veggies and size of roast...
Take roast in 4 lb range. Brown very lightly in skillet with some olive oil. Then add 1 teaspon of salt and 1/2 teaspoon pepper to flour and mix in small bowl. Coat roast with mixture.
In crock pot add 4 or more potatoes peeled and quartered, carrots chuncked up, green pepper(sliced). These go in crock first. You can add 1 cup water if planning on making gravy but not necessary. Then put roast on top. Then cover entire roast with some fresh mushrooms and onion(sliced). I then sprinkle a little pepper on top of roast Put lid on crock and set on low for 8-10 hours. Can even go a little longer. Thats it. Simple but the roast just melts in your mouth and veggies are very tender and tasty.
I like usin the ole crock pot cause it seems its fairly easy and you dont need to be a chef (which i aint) ;D

Loggy are you saying you add no water at all to your crock pot? What keeps everything from sticking?

mamaflinter, The veggies go in first on the bottom and sides of roast and keep the roast from touching bottom/sides and temp setting is set on very lowest for the slow cook. Lid must be on tight and not removed during cook time or steam escapes.
Guess juices from meat and veggies drain down? Sometimes I will dump can of mushrooms in with juice if no fresh. Amazing how much liquid you have in after all day. Depending on your paricular slow cooker temp you could add a very small amount of water as insurance.

I do something simular, However I put in a package of Liptons onion soup mix. Add vegies etc. Lou
