Take meat from Goose Breasts and cube into 1” squares. Sprinkle on pepper and garlic powder to taste. Wrap cubes with lean smoked bacon at least once around and skewer with wooden party sticks (Stronger and twice as long as tooth picks). Two cubes fit easily onto one party stick. Usually I place a spiced cube at each end of a bacon strip and roll inwards. Place prepared cube sticks on cookie sheet and cook at no higher than 320F. Check every half hour, drain grease and rotate cubes. Usually cooking time from 1-1/2 to 2 hours with a full tray depending on oven. When you feel cubes are almost cooked I put a dab of honey garlic barbecue sauce on cubes for the last 10-15 minutes. Tastes great at hot, warm or room temperature. This also works well with deer meat.
