I use this recipe with venison it works best with tenderloin, but any cuts turn out well.
1-1.5 lbs venison 1 cup seasoned flour (season to taste, I use garlic powder, season salt, and pepper) 2 tblspoons olive oil 1 can italian flavored tomatoes 2-3 large onions thinly sliced 1 cup shreaded carrots 1-2 tblspoon worcestshire sauce
slice the meat 1" thick cover with seasoned flour and pound in with edge of saucer or glass
in a heavy skillet brown meat on both sides (don't over do it)
add rest of ingredients, cover and simmer on low heat for 30-45 minutes until done
serve over mashed potatoes
