This is an easy to prepare recipe that others will think you spent all day preparing.
INGREDIENTS: 1 whole cottontail with giblets per two people 1 box of Stove Top stuffing for chicken per rabbit 3 slices bacon per rabbit thyme paprika sea salt or kosher salt black pepper
Wash rabbit well and put into roasting pan. Dust rabbit all over with paprika and thyme. Be sure to put a lot of thyme inside the cavity as this will flavor the rabbit better. I use a salt mill to grind coarse kosher salt over the rabbit and inside the cavity. I use a pepper mill to grind black pepper all over rabbit. Now I place the heart and liver in the pan next to the rabbit and it goes into a oven preheated to 350 degrees for 30 minutes. Before the 30 minutes are up, I prepare the stuffing according to the directions on the box. I remove the heart and liver, dice well, and add to the stuffing. Now I stuff the rabbit cavity with the stuffing and cover the stuffing with the 3 slices of bacon. Save any remaining stuffing. The rabbit goes back into the oven for 45 minutes or until done. When done, carefull lift the rabbit out of the pan so the stuffing doesn't spill out and place on a platter. Now take the remaining stuffing (keep it warm or reheat prior to removing rabbit from oven) and arrange it around the rabbit on the platter. You will find it not only easy to prepare, but delicious.
