3 lb goose meat, including hind quarters 2 onions two cups broth (chicken or game) two cups water one package S and B Golden Curry Mix Cooking oil
In a Dutch oven with a good lid, Brown the onion in the oil; when the onion is translucent and starting to carmelize, ;put in the meat. Stir frequently. Liquid will come out of the meat; when it has all evaporated, pour in the water and the broth. Stir in the curry mix. Put in the oven at 350 degrees for an hour and a half.
My wife, who really doesn't like game in general and puts snow goose at the bottom of the list, tasted it and said, Well, I don't hate it. (Strong praise. You shoulda been there.)
Goose hind quarters are greatly undervalued. They have a beefy taste, even on a snow goose.
