Here's a recipe for pike I found years ago. Can be used with other fish. We usually use it with Walleye.
3 lbs Pike fillets 1 1/2 c Ritz Crackers, crushed 3/4 c Parmesan cheese, grated Butter 2 Eggs Lemon Pepper Garlic Powder Lemon Slices
Mix parmesan cheese and crushed crackers in a bowl. Beat eggs and dip fillets in eggs mixture. Roll fish in cracker/cheese mixture. Melt butter in fry pan at medium heat. Lay coated fish in pan and sprinkle lemon pepper and garlic powder to your liking. Cook until golden brown around the edges. Flip over and reapply spices. Cook until fish flakes apart. Finally lay fish on paper towel to soak up excess butter and squeeze lemon slices over fish.
