You need a 5 gallon plastic bucket with a lid Fill half full of water 3 pounds of table salt 2 pounds Brown Sugar 2 ounces of Baking soda 2 ounces Salt Peter Ready to eat in 1 week

Oooops! ;D Good for 15-20 pounds of meat.Your choice.I usually de-bone every thing forward of the backstraps and corn that.I have done the ribs before but I didn't care for them ,not enough meat. I love this recipe,We cook it in a corned meat stew with carrots,parsnips and turnips and potatoes.Then for the last 20 minutes we throw in a bunch of saurkraut. My mouth is watering!!!! ;D

I try to avoid anything with saltpeter ever since bootcamp.

It is!We always have a bucket up at the hunting camp for trips in the winter.We usually get a small gang to go into my hunting camp for some good food ,cards and a few beers.

Where does a person find saltpeter?
Are the 2 oz of saltpeter and baking soda by volume or weight?
Once the meat is cured do you rinse and dry it or how do you treat if after that?

BPHOUND Here, I'm using Soggys computer. Saltpeter can be found at most Drug stores.They are measured out by volume.I usually eat mine rather quickly but the meat can be rinced off and bagged then put in your freezer.
