Was going through my game freezer and noticed I still have lots of venison left from last year and because the new season is here decided I'd better do something with what I have and make some room. Took out a bunch, thawed it, sliced it and applied the spices. This morning I cranked up the smoker. 1/2 is in there now and the rest will go in later. Will be busy out there today. It's my future daughter-in-laws birthday and as usual, I'm on the hook for food. Got about 8 lbs of pork ribs ready to go on the BBQ this afternoon. HMMMM BBQ pork ribs for supper and jerky for desert ;D.

No Ken, I didn't. I should now that you mention it, 'cause it is good . I usually by a prepared cure and spice. It's Hi Mountain pepper blend.
