Since my low fat diet I've been trying different ways to enjoy deer bergers I tried a product from the Sausage maker called fat replacer this product keeps venison moist and keeps bergers togther and less shrinkage while cooking It comes in 1lb or 2lb The 2lb has enough for 100 Lbs of meat Just follow the instructions It works I also make sausage salami with their mixes Anybody intrested I'll give my technic for making sausage I eat venison at least once a day ;D

The web site is thesausagemaker.com Its made out of oats and oat bran They have alot of sausage kits also When I make my sausage I don't use casings comes out aok
