Easy recipe for that feral hog in a crock pot. Serves about four.
1 1/2 lbs of pork cut into cubes 1 large onion cubed 1 large bell pepper cut in chunks Salt & Pepper to taste 1 Tbs fennel One large can chunk pineapple in juice Two Tbs flour (or cornstarch) Couple Tbs Worcestshire Sauce 4 packets of sweet 'n low or splenda (or 2 Tbs sugar)
Cut up meat in cubes and place in your crock pot. Add salt and pepper to taste and fennel. Open can of pineapple chunks and put the liquid in the pot. Cook on high for about three hours.
Turn off and remove about a cup of liquid. Cool it down with a bit of ice cubes and stir in a couple tablespoons of flour or cornstarch to thicken it a bit. Cut up a large onion in small chunks and also a large green pepper and put in the pot along with the pineapple. Add a couple tablespoons of Worcestshire sauce and about three or four packages of Sweet 'n Low or a couple tablespoons of sugar. Pour the liquid back in the pot and cook on high for another hour until it is bubbling and turn down to low until the meat and vegetables are well done !!!
Serve over rice. Goes nice with a good glass of wine,but then what doesn't?

Never had feral hog but that recipe sure makes me want to try it. Think I better get back to my renovation work or I‘ll end up in the kitchen trying to neutralize some stomach acid being generated from reading recipes. Wine is great with meals but I find the better-cooked meals with wine are when the cook has a glass or two while preparing it. Always seems to turn out tastier dishes for some reason. ;D Ed

Always seems to turn out tastier dishes for some reason. ;D Ed I second that motion! Used to love watching Justin Wilson's Cajun Cooking Show on TV. He always got out a bottle of wine and had a bit with whatever he cooked. Used to say, "What kind of wine is good with this recipe. . . . . . whatever kind of wine you like!!"
